I don't see why the stock chip on a stock car get such a bad knock, I suspect things get exaggerated over time?

Once the rod gets shortened and boost cranked  I will believe it has no/little margin.
But if you have a scan tool and see no knock with whatever octane you have available it it so bad?

Without writing a novel the stock chip has 22-23 degs of timing.   This was designed for 12-14lbs of boost with better pump gas circ. 1987.   If you lower your boost below this I guess you can still use it without knock.

but it will not idle as smoothly nor drive as well
