could i use telephone wire for low draw stuff like sensors and triggers ?

Id like to try and reduce my rats nest and using a 24-3  would help a lot

If so, I would think CAT5E network cable may be better. Minimal load of course.

Solid core wire will break with all the movement.
Pour some automotive fluids on wire you want to use and see how the insulation holds up. Other than that if the gauge is adequate for the current flow...
Fuses protect wire. You will need a fuse that limits the current to a value the wire is rated for.

Cat -whatever that is plenum rated would at least cover flammability and flame spread issues.
I forgot to mention temperature ratings.

If you want light durable wire, ptfe coated is your answer. Not saying the current is higher or lower just that you will not have to deal with fire from it as it is more robust. Be prepared to pay the price.
